1 eggplant, peeled and diced

1 onion, diced

2 cloves garlic, minced

1 pound lean ground beef

1/2 cup bulgur wheat

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon allspice

3 tablespoons olive oil, divided

2 cups tomato sauce

1/2 cup chopped fresh parsley leaves

Instructions:

1. In a large bowl, combine the eggplant, onion, garlic, ground beef, bulgur wheat, salt, pepper, and allspice. Mix well to combine. Shape mixture into small balls.
