Dried Saffron

The Iranian cuisine, usually called Persian cuisine, is no doubt full of aroma and flavors of some very special ingredients like saffron and rosewater. Persian dishes are very famous in the middle east and many other parts of the world. It certainly carries the richness and cultural history of Iran. Many Mughlai dishes are derived from Persian cuisines. Here are some of the most famous and popular Persian dishes.

Khoresh-e- fesenjan

This is one of the most favorite Persian dishes made especially in winter. It is a very rich and nutritious dish made with walnuts, pomegranate, pumpkins, and molasses Here is the recipe of this wonderful dish.


  • 2 cups walnuts
  • One cup of butternut, squash, or grated pumpkin 
  • 2½ cup of water
  • 8-10  dried plums 
  • 6 pieces of chicken thighs, skinless and boneless 
  • 3 tablespoon brown sugar
  • One large chopped onion 
  • One tablespoon olive oil 
  • ½ cup pomegranate molasses 
  • Salt and pepper to taste 

To Prepare

  • Roast the walnuts in the oven for 5-8 minutes in 350 degrees. Take them out and let it cool.
  • Chop the walnuts finely with the help of a food processor.
  • Mix the chopped walnuts with grated pumpkin (or squash) and plums in a pot. Add water, salt, and pepper, and cook this mixture on medium heat for 30 minutes. Stir in between.
  • Take the minced onions and some olive oil in a pot and then put the chicken thighs into the pot. Add salt and pepper and cook with the covered lid for around 10-12 minutes.
  • Add the walnut sauce to pomegranate molasses and brown sugar according to your taste. Take out the chicken thighs and put them into a plate. Take off the caramelized onions from the thighs and add them to the walnut sauce. Stir well and add the chicken thighs in that sauce. Cover it with a lid and cook for one hour on medium-low heat. The dish is ready and you can serve it with some rice or bread.


Labneh with cream

This second Persian recipe is a very tasty Persian dip.

Mast-o- Khiar.

This Persian dip can be enjoyed in many ways. You can have it with grilled meat, chips, or bread. The ingredients for this dip are :

  • 3 cups of greek yogurt
  • One peeled and grated cucumber
  • A ½ cup of walnuts chopped finely
  • One tablespoon of extra virgin olive oil
  • A ¼ spoon of sea salt
  • 1½  spoon of dried mint leaves

To Prepare:

  • In a bowl, put all the yogurt, grated cucumber, dried mint leaves chopped walnuts, garlic and salt, and pepper.
  • Mix well and transfer the mixture into a serving bowl. 
  • Sprinkle some dried mint leaves and drizzle some extra virgin oil. 
  • If you wish, you can also sprinkle some edible rose petals.

As you can see, Persian cuisine is not about hummus and falafel but is more about walnuts, lamb, and pistachio. It is a little different from the middle eastern cuisine.
