Arabic harissa is a dish of ground meat and bulgur or couscous, a paste made from chili peppers and spices. One of the healthiest foods one can ever eat in Arab. The name also knows it as Hareesha, Harissa, and Jahres. There are various dishes variations based on different Arab traditions.
Ingredients for the recipe
Chicken – 1/2 Kg (Boneless)
Wheat 1/2 Kg and Barley 1/2 Kg soaked overnight and drained
Ginger-Garlic Paste – 1 Tablespoon
Green Chili Paste 2 Tablespoon or to taste
Crushed Cumin Seeds 1/2 Tablespoon
Fennel Seeds (Crushed)
Salt according to taste.
Chat Masala
Lemon Juice 2 Tablespoon
Edible Oil for Tempering (Bagher)
Olive Oil or Ghee for garnishing
Haleem Masala 1/2 Tablespoon
Barista or Fried Onions
Coriander Leaves
Directions to cook
First, take the soaked barley and wheat and boil it in a pan with double water. For a more comfortable and quick process, you can use the pressure cooker. If using a pan, it will take about an hour to cook thoroughly, and if using a pressure cooker, it will take around half an hour.
The mixture of boiled wheat and barley need to be blend or churn until it converts into a thick paste, and you can do so by using a hand blender. The thick paste is more preferred.
For the traditional flavor, add the paste of ginger, garlic, salt according to taste; additionally, put the mixture of cumin and fennel seeds in a separate pan. Cut the chicken into small pieces and keep inside. Then, put the small pieces of chicken to the mixture of wheat and barley. Mix it well and cook for another 15 minutes. Add chat masala and lemon juice to it for more taste.
Either you can temper (Tadka/Bagher) with just oil and by using Haleem masala. For better taste, spread the Haleem Masala on Harees and heat for some time using oil in a pan. To observe the fragrance in Harissa, cover it up entirely.
Now, your delicious and healthy Arabic chicken is prepared and ready to eat. Garnish it with fried onions, fresh coriander leaves, and a tablespoon of olive oil or ghee. If possible, use the pure sugarcane vinegar for taste enhancement.
